  • 1/4 tsp Salt
  • 1/2 cup Vegan Yogurt Choosing a thicker variety works best
  • 1 tsp Vanilla Extract
Cinnamon Swirl
  • 2 tbsp Brown Sugar Coconut sugar can substitute
  • 1 tsp Ground Cinnamon
  • 1 tbsp Almond Butter Peanut butter can also be a substitute
  • 1 tbsp Maple Syrup Agave syrup can be used as a substitute

Method
 

Preparation
  1. In a measuring cup, combine soy milk with apple cider vinegar and let it sit for 5 minutes.
  2. In a mixing bowl, blend brown sugar, ground cinnamon, almond butter, and maple syrup for the cinnamon swirl mixture.
  3. In a large bowl, whisk together all-purpose flour, brown sugar, baking powder, baking soda, ground cinnamon, and salt.
  4. Add melted vegan butter, vegan yogurt, vanilla extract, and the soy milk mixture to the dry ingredients and mix gently.
  5. Preheat the griddle over medium heat and lightly grease it with vegan butter.
  6. Pour pancake batter onto the griddle, pipe the cinnamon swirl on top, and cook until bubbles form, about 2-3 minutes.
  7. Flip the pancake and cook until golden brown for another 2-3 minutes.
  8. Serve warm, drizzled with maple syrup or a vegan cream cheese glaze.
