- Preheat your oven to 350°F (175°C) and line an 8×8-inch baking dish with parchment paper.
- In a bowl, combine graham cracker crumbs, flour, sugar, and salt. Add melted butter and mix until resembling wet sand. Press two-thirds into the baking dish.
- In a mixer, beat cream cheese until smooth. Gradually add sugar, then eggs one at a time. Fold in lemon zest, juice, and vanilla until velvety.
- Pour cheesecake filling over the crust and sprinkle remaining crumb mixture on top.
- Bake for 30–35 minutes until edges are set but center wobbles slightly.
- Cool at room temperature for 1 hour, then chill for at least 3 hours or overnight before serving.
