  • 2 cups uncooked short-grain white rice Substitute with Calrose for similar results.
  • 2 cups water Necessary for cooking rice.
For the Spam Glaze
  • 1 can Spam Slice into rectangular pieces. Alternatives include turkey Spam.
  • 1/4 cup soy sauce Opt for low-sodium for a healthier choice.
  • 2 tablespoons dark brown sugar Honey or light brown sugar can be used as a substitute.
  • 1 tablespoon mirin Can be replaced with sugar mixed with water.
  • 1 teaspoon seasoned rice vinegar Optional.
  • 1 teaspoon sesame oil Optional.
For Frying and Wrapping
  • 2 tablespoons vegetable oil Alternatives include olive or canola oil.
  • 4 sheets sushi nori Can be cut into strips.
  • 1 tablespoon furikake Optional; can substitute with sesame seeds.

Method
 

Step-by-Step Instructions
  1. Rinse 2 cups of uncooked short-grain white rice under cold water until clear. Combine with 2 cups of water in a rice cooker or pot and cook.
  2. Slice Spam into 8 pieces, each about 3/8-inch thick. Set aside.
  3. In a bowl, whisk together 1/4 cup soy sauce, 2 tablespoons dark brown sugar, 1 tablespoon mirin, 1 teaspoon seasoned rice vinegar, and 1 teaspoon sesame oil until sugar dissolves.
  4. Heat 2 tablespoons vegetable oil in a skillet. Add Spam slices and fry for 2-3 minutes until golden brown.
  5. Pour glaze into the skillet and coat Spam, simmering for 1-2 minutes until it thickens.
  6. Cut sushi nori into strips approximately 2 inches wide.
  7. To assemble, fill a musubi mold with warm rice, press down, place a slice of glazed Spam on top, and add another layer of rice if desired.
  8. Wrap with nori; moistening the edges to seal.
  9. Serve warm or wrap individually for on-the-go snacking.
