- Begin by rinsing your large strawberries under cool water, then gently patting them dry. Carefully cut off the stems and slice each strawberry in half lengthwise. Hollow out the center slightly to create room for the filling.
- In a medium-sized bowl, pour in the heavy whipping cream and beat on medium speed for about 5 minutes until stiff peaks form. Set aside.
- In a separate bowl, combine the softened cream cheese, sour cream, sugar, vanilla extract, and optional lemon juice. Mix until smooth.
- Gently fold the whipped cream into the cream cheese mixture until well combined.
- Transfer the filling into a piping bag and generously pipe it into each hollowed strawberry half.
