  • 1 large sugar cookie dough log 16 oz

  • 1/2 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1/4 cup Greek yogurt plain or vanilla
  • 1 cup assorted fresh fruits strawberries, blueberries, kiwi, bananas, etc.
  • 1/4 cup shredded coconut optional
  • 1/4 cup mini chocolate chips optional

Method
 

  1. Preheat the oven to 350°F.
  2. Slice the sugar cookie dough log into 1/4-inch thick rounds and place them on a baking sheet lined with parchment paper.
  3. Bake for 10-12 minutes or until lightly golden. Let cool completely.
  4. In a mixing bowl, combine the softened cream cheese, powdered sugar, vanilla extract, and Greek yogurt. Beat until smooth and creamy.
  5. Spread a generous layer of the cream cheese mixture onto each cooled cookie round.
  6. Arrange the assorted fresh fruits on top of the cream cheese layer, decorating them to resemble Easter eggs.
  7. If desired, sprinkle shredded coconut and mini chocolate chips over the fruit for added texture and flavor.
  8. Serve immediately or refrigerate for up to 2 hours before serving for a chilled treat.
