Ingredients
  

  • 2 cups shredded rotisserie chicken
  • 1 tablespoon olive oil
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • 1 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 8 small corn or flour tortillas
  • 1 cup shredded lettuce
  • 1 cup diced tomatoes
  • 1/2 cup shredded cheese cheddar or Mexican blend
  • 1/4 cup sour cream
  • 1/4 cup fresh cilantro chopped (optional)
  • Lime wedges for serving

Method
 

  1. In a skillet, heat the olive oil over medium heat. Add the shredded rotisserie chicken, chili powder, cumin, garlic powder, onion powder, salt, and black pepper. Stir to combine and cook for about 5 minutes, or until heated through.
  2. While the chicken is heating, warm the tortillas in a separate pan or microwave until pliable.
  3. To assemble the tacos, place a generous portion of the seasoned chicken onto each tortilla.
  4. Top with shredded lettuce, diced tomatoes, shredded cheese, and a dollop of sour cream.
  5. Garnish with fresh cilantro if desired and serve with lime wedges on the side.
