Preparation Steps

  2. Prepare the Tofu: Drain and press tofu to remove excess liquid, then crumble into small pieces.
  3. Sauté the Garlic: Heat olive oil in a large skillet, add minced garlic, and sauté for 1-2 minutes until fragrant.
  4. Add Bell Peppers: Add chopped bell pepper and sauté for about 5 minutes until tender.
  5. Incorporate Tofu and Spices: Stir in crumbled tofu and spices; cook for 5 minutes.
  6. Simmer with Spinach and Tomato Sauce: Add spinach and tomato sauce; simmer for 5 minutes.
  7. Combine Pasta and Sauce: Add drained pasta to the skillet and toss to coat for 2-3 minutes.
  8. Serve and Garnish: Transfer to serving bowls and garnish with parsley or vegan cheese.
