- Preheat your oven to 350°F (175°C) and grease a 9x13-inch baking dish.
- Slice 6-8 English muffins in half, toast them until golden brown, and layer half in the baking dish, cut side up.
- Evenly distribute 8 ounces of Canadian bacon over the layer of toasted muffins.
- Whisk together 8 large eggs, 2 cups of whole milk, and a pinch of salt and pepper until smooth, then pour over the layers.
- Drizzle 1 cup of hollandaise sauce across the top of the casserole.
- Bake for 30-40 minutes until set and golden brown.
- Let it rest for about 10 minutes before slicing.
- Garnish with chopped fresh herbs before serving.
