Preheat your oven to 375°F (190°C).
In a skillet, heat the olive oil over medium heat. Add the diced bell peppers and sauté for about 3-4 minutes until they are tender.
In a bowl, crack the eggs and whisk them together with garlic powder and black pepper until well combined.
Pour the egg mixture into the skillet with the sautéed bell peppers. Cook, stirring gently, until the eggs are just set but still slightly runny. Remove from heat.
Place the split English muffin halves on a baking sheet. Spoon the egg and bell pepper mixture evenly onto each half.
Top each muffin half with diced ham or sausage and sprinkle with shredded mozzarella cheese.
Bake in the preheated oven for about 10-12 minutes, or until the cheese is melted and bubbly.
Remove from the oven and let cool for a minute. Garnish with fresh parsley before serving.
