For the Avocado Salsa
  • 2 whole Avocados Choose ripe but firm
  • 1 cup Cherry Tomatoes Quartered or chopped
  • 1 cup Fresh Corn Best when freshly cut from the cob
  • ½ cup Red Onion Diced
  • ½ cup Red Bell Pepper Diced
  • 1 whole Jalapeño Pepper Seeds removed for less heat
  • ¼ cup Cilantro Omit if not preferred
  • 1 tablespoon Additional Lime Juice Use to balance flavors

Method
 

Preparation Steps
  1. In a mixing bowl, whisk together olive oil, lime juice and zest, chili powder, brown sugar, salt, cumin, smoked paprika, onion powder, garlic powder, and optional chipotle chili powder to create a chicken rub.
  2. Pound chicken breasts to even thickness, coat with the prepared rub, and allow to marinate at room temperature for about 30 minutes.
  3. Heat a grill pan over medium-high heat, add marinated chicken and cook for 3–5 minutes on each side until golden brown and internal temperature reaches 165°F.
  4. Let the chicken rest for 5 minutes after cooking.
  5. In a large bowl, combine chopped tomatoes, fresh corn, diced onion, bell pepper, and jalapeño to prepare avocado salsa, mix well and chill for at least 30 minutes.
  6. Just before serving, gently fold in diced avocados and an additional squeeze of lime juice into the salsa.
  7. Slice Fiesta Lime Chicken and serve topped with avocado salsa.

Notes
