Preparation Steps
- In a mixing bowl, whisk together olive oil, lime juice and zest, chili powder, brown sugar, salt, cumin, smoked paprika, onion powder, garlic powder, and optional chipotle chili powder to create a chicken rub.
- Pound chicken breasts to even thickness, coat with the prepared rub, and allow to marinate at room temperature for about 30 minutes.
- Heat a grill pan over medium-high heat, add marinated chicken and cook for 3–5 minutes on each side until golden brown and internal temperature reaches 165°F.
- Let the chicken rest for 5 minutes after cooking.
- In a large bowl, combine chopped tomatoes, fresh corn, diced onion, bell pepper, and jalapeño to prepare avocado salsa, mix well and chill for at least 30 minutes.
- Just before serving, gently fold in diced avocados and an additional squeeze of lime juice into the salsa.
- Slice Fiesta Lime Chicken and serve topped with avocado salsa.
