  • 1/4 cup water Adjust for preferred texture.
For the Tacos
  • 4 pieces corn tortillas Flour or whole-wheat tortillas are alternatives.
  • 1/4 cup cilantro Chopped; omit if not preferred.

Step-by-Step Instructions
  1. Heat the olive oil in a large skillet over medium-high heat until shimmering.
  2. Add the diced onion and minced chipotle pepper to the skillet. Sauté for 4-5 minutes until the onion is translucent.
  3. Stir in the minced garlic and oregano, cooking for an additional minute.
  4. Add the black beans, tomato paste, and water. Mix until well combined and cook for 5 minutes.
  5. Season the filling with salt and pepper. Simmer for another minute.
  6. Warm the corn tortillas in a separate skillet for 30-45 seconds on each side.
  7. Assemble the tacos by spooning the filling onto each tortilla and garnishing with cilantro and other toppings.
