Step-by-Step Instructions
  1. Preheat your oven to 375°F (190°C). Prepare a muffin tin with liners or grease it.
  2. In a large mixing bowl, combine Greek yogurt, milk, honey, egg, vegetable oil, and vanilla extract. Whisk until smooth.
  3. In a separate bowl, whisk together rolled oats, flour, baking powder, baking soda, cinnamon, and salt.
  4. Fold dry ingredients into wet mixture gently until just combined.
  5. Fold in blueberries without breaking them.
  6. Fill muffin cups about two-thirds full with batter.
  7. Bake for 18-20 minutes until golden and a toothpick comes out clean.
  8. Cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
