Step-by-Step Instructions
  1. In a small bowl, combine 1/4 cup extra virgin olive oil, 2 tablespoons balsamic vinegar, 1 teaspoon dried oregano, and 1 teaspoon dried basil. Whisk until emulsified.
  2. Rinse the English cucumber and optionally peel the skin. Score the skin with a fork and slice thinly, then dice into bite-sized pieces.
  3. Rinse the cherry tomatoes, pat dry, and cut each into quarters.
  4. Finely mince the red onion and sprinkle over the cucumber and tomatoes (optional).
  5. Add fresh mozzarella to the bowl and pat dry if necessary.
  6. Pour the dressing over the salad and gently toss to combine.
  7. Let the salad sit for about 10 minutes to meld flavors.
