Ingredients
  

  • 2 cups cherry tomatoes halved
  • 1 large cucumber diced
  • 1/4 red onion thinly sliced
  • 1/4 cup fresh parsley chopped
  • 1/4 cup feta cheese crumbled
  • 3 tablespoons olive oil
  • 2 tablespoons red wine vinegar
  • 1 teaspoon dried oregano
  • Salt and pepper to taste

Method
 

  1. In a large bowl, combine the halved cherry tomatoes, diced cucumber, sliced red onion, and chopped parsley.
  2. In a small bowl, whisk together the olive oil, red wine vinegar, dried oregano, salt, and pepper.
  3. Pour the dressing over the salad and toss gently to combine.
  4. Sprinkle the crumbled feta cheese on top and give it another light toss.
  5. Chill the salad in the refrigerator for at least 15 minutes before serving to allow the flavors to meld.
