Ingredients
  

  • 1 can 15 ounces sweet corn, drained
  • 1 can 15 ounces black beans, rinsed and drained
  • 1 cup cherry tomatoes halved
  • 1 cup diced bell pepper any color
  • 1 cup shredded cheddar cheese
  • 1/2 cup red onion finely chopped
  • 1 cup Fritos corn chips
  • 1/2 cup mayonnaise
  • 1 tablespoon lime juice
  • 1 teaspoon chili powder
  • Salt and pepper to taste

Method
 

  1. In a large mixing bowl, combine the sweet corn, black beans, cherry tomatoes, bell pepper, cheddar cheese, and red onion. Stir gently to mix the ingredients.
  2. In a separate small bowl, whisk together the mayonnaise, lime juice, chili powder, salt, and pepper until smooth.
  3. Pour the dressing over the corn mixture and stir until everything is evenly coated.
  4. Gently fold in the Fritos corn chips just before serving to keep them crunchy.
  5. Chill the salad in the refrigerator for at least 30 minutes before serving to allow the flavors to meld.
