Step-by-Step Instructions
  1. In a mixing bowl, beat 2 large eggs until foamy. Add 1 cup of milk and 1 teaspoon of pure vanilla extract, mixing until well combined. Gradually incorporate 1 cup of all-purpose flour, 2 tablespoons of granulated sugar, 1 tablespoon of baking powder, a pinch of salt, 1 teaspoon of ground cinnamon, and 1/4 teaspoon of ground nutmeg, whisking until smooth.
  2. Pour vegetable oil into a heavy-bottomed pot, filling it about 3/4 inch deep, and heat over medium-high heat until it reaches 375°F (190°C). Use a thermometer for accuracy.
  3. Once the oil is ready, use a cookie scoop to drop spoonfuls of batter into the hot oil. Fry the bites for 1-2 minutes until golden brown. Flip and fry for another 1-2 minutes until crispy.
