Ingredients
  

  • 1 pound sirloin steak cut into 1-inch cubes
  • 1 pound baby potatoes halved
  • 4 tablespoons unsalted butter
  • 4 cloves garlic minced
  • 1 teaspoon dried thyme
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 2 tablespoons fresh parsley chopped (for garnish)

Method
 

  1. Preheat your oven to 400°F (200°C).
  2. In a large pot, bring salted water to a boil. Add the halved baby potatoes and cook for about 10-12 minutes, or until fork-tender. Drain and set aside.
  3. In a large skillet over medium-high heat, melt 2 tablespoons of butter. Add the steak cubes and season with salt, pepper, paprika, and thyme. Sear the steak for about 2-3 minutes on each side until browned but not fully cooked. Remove the steak from the skillet and set aside.
  4. In the same skillet, add the remaining 2 tablespoons of butter and the minced garlic. Sauté for about 1 minute until fragrant.
  5. Add the cooked potatoes to the skillet and toss to coat them in the garlic butter. Cook for an additional 3-4 minutes, allowing the potatoes to get slightly crispy.
  6. Return the steak to the skillet, mixing it with the potatoes and garlic butter. Cook for another 2-3 minutes until the steak is cooked to your desired doneness.
  7. Remove from heat and garnish with fresh parsley before serving.
