  • 4 cloves garlic minced
  • 2 tablespoons fresh rosemary chopped
  • 2 tablespoons fresh thyme chopped
  • 1 tablespoon salt
  • 1 teaspoon black pepper
  • 2 tablespoons Dijon mustard
  • 1 tablespoon balsamic vinegar

Method
 

  1. Preheat your oven to 400°F.
  2. In a small bowl, mix together the minced garlic, rosemary, thyme, salt, pepper, Dijon mustard, and balsamic vinegar to create a herb paste.
  3. Rub the olive oil all over the beef tenderloin. Then, spread the herb paste evenly over the entire surface of the meat.
  4. Place the beef tenderloin on a roasting pan or a baking sheet. Roast in the preheated oven for about 25-30 minutes for medium-rare, or until the internal temperature reaches 135°F.
  5. Once cooked to your desired doneness, remove the tenderloin from the oven and cover it loosely with aluminum foil. Let it rest for 10-15 minutes before slicing.
  6. Slice the beef tenderloin into medallions and serve with your favorite sides.
