Preheat your oven to 400°F.
In a small bowl, mix together the minced garlic, rosemary, thyme, salt, pepper, Dijon mustard, and balsamic vinegar to create a herb paste.
Rub the olive oil all over the beef tenderloin. Then, spread the herb paste evenly over the entire surface of the meat.
Place the beef tenderloin on a roasting pan or a baking sheet. Roast in the preheated oven for about 25-30 minutes for medium-rare, or until the internal temperature reaches 135°F.
Once cooked to your desired doneness, remove the tenderloin from the oven and cover it loosely with aluminum foil. Let it rest for 10-15 minutes before slicing.
Slice the beef tenderloin into medallions and serve with your favorite sides.
