  • 4 pieces Chicken Breast can substitute with boneless thighs or bone-in pieces
  • 3 cloves Garlic minced
  • 2 tablespoons Olive Oil or avocado oil
For the Potatoes
  • 2 pounds Potatoes Yukon Gold or Russet
  • 0.5 cup Parmesan Cheese can substitute with Pecorino
  • 1 teaspoon Salt adjust to taste
  • 1 teaspoon Pepper adjust to taste
For Garnish
  • 0.25 cup Fresh Parsley optional

Method
 

Cooking Instructions
  1. Preheat the oven to 400°F (200°C) and prepare a large baking sheet with parchment paper.
  2. Season the chicken breasts with olive oil, salt, pepper, and minced garlic, placing them on one side of the baking sheet.
  3. Wash and cut the potatoes into even-sized pieces and arrange them on the opposite side of the baking sheet. Drizzle with olive oil, salt, pepper, and Parmesan cheese.
  4. Roast the chicken and potatoes in the oven for 25-30 minutes, flipping the potatoes halfway through.
  5. Check the chicken’s internal temperature, which should be at 165°F (74°C), and ensure the potatoes are golden and crispy.
  6. In the last 5 minutes, sprinkle extra Parmesan on the chicken and potatoes and switch to broil until golden brown.
  7. Remove from the oven, let rest for a couple of minutes, and garnish with fresh parsley before serving.
