- Preheat the oven to 400°F (200°C) and prepare a large baking sheet with parchment paper.
- Season the chicken breasts with olive oil, salt, pepper, and minced garlic, placing them on one side of the baking sheet.
- Wash and cut the potatoes into even-sized pieces and arrange them on the opposite side of the baking sheet. Drizzle with olive oil, salt, pepper, and Parmesan cheese.
- Roast the chicken and potatoes in the oven for 25-30 minutes, flipping the potatoes halfway through.
- Check the chicken’s internal temperature, which should be at 165°F (74°C), and ensure the potatoes are golden and crispy.
- In the last 5 minutes, sprinkle extra Parmesan on the chicken and potatoes and switch to broil until golden brown.
- Remove from the oven, let rest for a couple of minutes, and garnish with fresh parsley before serving.
