Preheat your oven to 350°F (175°C).
In a large skillet, heat the olive oil over medium heat. Add the diced onion and sauté for about 3-4 minutes until softened.
Add the minced garlic and cook for another minute until fragrant.
Add the ground turkey to the skillet, breaking it apart with a spatula. Cook until browned and cooked through, about 5-7 minutes.
Stir in the taco seasoning, black beans, corn, diced tomatoes, and cooked rice. Mix well and let it simmer for about 5 minutes. Season with salt and pepper to taste.
Transfer the mixture to a greased 9x13-inch baking dish. Spread the salsa evenly over the top.
Sprinkle the shredded cheddar cheese over the salsa.
Bake in the preheated oven for 20-25 minutes, or until the cheese is melted and bubbly.
Remove from the oven and let it cool for a few minutes. Garnish with fresh cilantro before serving.
