For the Potatoes
  • 1.5 pounds baby potatoes waxy potatoes ensure tender and fluffy results
  • 1 bunch Fresh Basil or Parsley garnish; can substitute with dill or cilantro
For the Roasting Mix
  • 1 cup cherry tomatoes halved; regular tomatoes can be chopped to size
  • 2 teaspoons garlic (minced) garlic powder can work as a substitute
  • 2 tablespoons olive oil can substitute with avocado oil
  • 1 teaspoon dried oregano can substitute with thyme or basil
  • to taste black pepper crushed red pepper flakes can add heat
  • to taste salt use sparingly due to feta’s saltiness
For the Feta
  • 1 block feta cheese can substitute with goat cheese

Method
 

Preparation Steps
  1. Preheat your oven to 400°F (200°C) for optimal roasting.
  2. Wash and dry the baby potatoes, then halve or quarter them for uniform cooking. Place in a large baking dish.
  3. Add halved cherry tomatoes, minced garlic, olive oil, dried oregano, black pepper, and salt to the baking dish. Toss to coat evenly.
  4. Create a well in the center of the mixture and place a block of feta cheese in it. Drizzle with olive oil.
  5. Transfer the baking dish to the oven and roast for 35–40 minutes, stirring halfway through.
  6. Remove from the oven and stir the feta into the potatoes and tomatoes. Garnish with chopped basil or parsley before serving.
