Ingredients

  • 2 cups Pasta Any shape, cooked al dente
For the Vegetables
  • 2 cups Cucumber English cucumbers preferred
  • 1 small Onion Soaked in cold water
For the Creamy Dressing
  • 1 cup Greek Yogurt Or mayonnaise
  • 2 tablespoons Vinegar Apple cider or white wine vinegar
  • to taste Seasonings Salt, pepper, or herbs

Method
 

Preparation
  1. In a small bowl, combine Greek yogurt or mayonnaise with vinegar and seasonings. Whisk until smooth and set aside.
  2. Slice onion thinly and soak in cold water for 10 minutes, then drain.
  3. Cook pasta in salted boiling water until al dente (8-10 minutes), then rinse under cold water.
  4. Slice cucumbers thinly, removing seeds if using regular ones, and set aside.
  5. In a large mixing bowl, combine pasta, drained onions, and cucumber slices. Fold gently.
  6. Pour the dressing over the pasta mixture and carefully toss until all ingredients are coated.
  7. Cover and refrigerate for at least 40 minutes before serving.
