- In a small bowl, combine Greek yogurt or mayonnaise with vinegar and seasonings. Whisk until smooth and set aside.
- Slice onion thinly and soak in cold water for 10 minutes, then drain.
- Cook pasta in salted boiling water until al dente (8-10 minutes), then rinse under cold water.
- Slice cucumbers thinly, removing seeds if using regular ones, and set aside.
- In a large mixing bowl, combine pasta, drained onions, and cucumber slices. Fold gently.
- Pour the dressing over the pasta mixture and carefully toss until all ingredients are coated.
- Cover and refrigerate for at least 40 minutes before serving.
