- Heat a 4.5 quart soup pot over medium-high heat. Add olive oil and warm until it shimmers.
- Add ground beef, diced onion, and minced garlic. Cook for 5-7 minutes until the beef is browned and onions are transparent.
- Drain excess fat. Stir in diced tomatoes, tomato sauce, and chicken stock. Mix well.
- Add Italian herb blend along with salt and pepper. Then add bow tie pasta. Bring to a boil, then reduce to a simmer. Cook for 10-15 minutes until pasta is al dente.
- Remove from heat. Stir in ricotta, mozzarella, and parmesan cheese until melted and creamy. Serve garnished with fresh parsley.
