Step-by-Step Instructions
  1. Heat a 4.5 quart soup pot over medium-high heat. Add olive oil and warm until it shimmers.
  2. Add ground beef, diced onion, and minced garlic. Cook for 5-7 minutes until the beef is browned and onions are transparent.
  3. Drain excess fat. Stir in diced tomatoes, tomato sauce, and chicken stock. Mix well.
  4. Add Italian herb blend along with salt and pepper. Then add bow tie pasta. Bring to a boil, then reduce to a simmer. Cook for 10-15 minutes until pasta is al dente.
  5. Remove from heat. Stir in ricotta, mozzarella, and parmesan cheese until melted and creamy. Serve garnished with fresh parsley.
