Ingredients
  

  • 2 large chicken breasts about 1 pound total
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika
  • 1/4 cup honey
  • 2 tablespoons chipotle sauce adjust to taste
  • 1 cup cooked brown rice
  • 1 cup black beans drained and rinsed
  • 1 cup corn fresh, frozen, or canned
  • 1 cup cherry tomatoes halved
  • 1 avocado sliced
  • 1/4 cup chopped fresh cilantro
  • Lime wedges for serving

Method
 

  1. Preheat your grill or stovetop grill pan over medium-high heat.
  2. In a small bowl, mix together the olive oil, salt, black pepper, garlic powder, and smoked paprika. Rub this mixture all over the chicken breasts.
  3. Grill the chicken for about 6-7 minutes on each side, or until the internal temperature reaches 165°F. Remove from the grill and let it rest for 5 minutes.
  4. In a small saucepan, combine honey and chipotle sauce over low heat. Stir until warmed and well combined.
  5. Slice the grilled chicken and drizzle the honey chipotle sauce over the top.
  6. To assemble the bowls, divide the cooked brown rice among four bowls. Top each with black beans, corn, cherry tomatoes, sliced avocado, and grilled chicken.
  7. Garnish with chopped cilantro and serve with lime wedges on the side.
