Ingredients
  

  • 2 cups cooked white rice
  • 1 pound boneless skinless chicken breasts
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon smoked paprika
  • 1/2 cup honey
  • 1/4 cup chipotle sauce or adobo sauce from canned chipotles
  • 1 tablespoon lime juice
  • 1 cup corn canned or frozen
  • 1 cup black beans canned, rinsed and drained
  • 1 avocado sliced
  • 1/2 cup diced tomatoes
  • 1/4 cup chopped fresh cilantro
  • Lime wedges for serving

Method
 

  1. In a small bowl, mix together the honey, chipotle sauce, and lime juice. Set aside.
  2. Preheat a grill or grill pan over medium-high heat.
  3. Season the chicken breasts with olive oil, salt, pepper, garlic powder, onion powder, and smoked paprika.
  4. Grill the chicken for about 6-7 minutes on each side or until the internal temperature reaches 165°F.
  5. During the last few minutes of grilling, brush the honey chipotle sauce over the chicken.
  6. Remove the chicken from the grill and let it rest for 5 minutes before slicing.
  7. In serving bowls, layer the cooked rice, corn, black beans, sliced chicken, avocado, and diced tomatoes.
  8. Drizzle any remaining honey chipotle sauce over the top and garnish with fresh cilantro. Serve with lime wedges on the side.
