  • 2 large chicken breasts about 1 pound total
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon olive oil
  • 1/2 cup crumbled feta cheese
  • 1/4 cup honey
  • 1 teaspoon red pepper flakes adjust to taste
  • 1 tablespoon fresh lemon juice
  • 1 tablespoon chopped fresh parsley for garnish

Method
 

  1. Preheat your oven to 400°F.
  2. Pat the chicken breasts dry with paper towels and season both sides with salt and black pepper.
  3. In a large oven-safe skillet, heat the olive oil over medium-high heat. Once hot, add the chicken breasts and sear for about 5 minutes on each side until golden brown.
  4. While the chicken is cooking, in a small bowl, mix together the crumbled feta cheese, honey, red pepper flakes, and lemon juice until well combined.
  5. Once the chicken is seared, remove the skillet from the heat and spread the feta mixture evenly over the top of each chicken breast.
  6. Transfer the skillet to the preheated oven and bake for 20-25 minutes, or until the chicken is cooked through and reaches an internal temperature of 165°F.
  7. Remove from the oven and let it rest for 5 minutes. Garnish with chopped parsley before serving.
