Method
 

Step-by-Step Instructions
  1. In a food processor, combine flour, sugar, and salt, then add cold butter until the mixture resembles coarse crumbs. Add eggs to form a cohesive dough, adjusting with ice water if necessary.
  2. Wrap three-quarters of the dough in plastic wrap and refrigerate for 20 minutes.
  3. Peel and cube the apples, mixing them with brown sugar, vanilla, and cinnamon. Let sit to meld flavors.
  4. Preheat oven to 180°C (350°F).
  5. Line a baking tray with parchment paper. Press chilled dough into the bottom, add apple mixture, and crumble remaining dough on top.
  6. Bake for 25-30 minutes until golden brown and bubbly.
  7. Cook sugar in a saucepan over medium heat until amber, then add butter and cream, finishing with sea salt.
  8. Cut cooled bars, drizzle with caramel, and serve warm.
