- Preheat your oven to 350°F (175°C) and position the oven rack in the center.
- Peel the large apple and finely dice it into small, uniform pieces.
- In a saucepan, add diced apple, water, granulated sugar, unsweetened applesauce, and ½ teaspoon ground cinnamon. Stir and simmer for about 5 minutes until apples are tender.
- In a separate bowl, whisk together brown sugar, oats, flour, and remaining cinnamon. Cut in the cold, cubed butter until mixture resembles coarse crumbs.
- Fill each mini phyllo shell with about 1 teaspoon of the apple filling and sprinkle 1 teaspoon of the crumble topping over each.
- Place on a baking tray and bake for 15-20 minutes until golden brown.
- Allow to cool for a few minutes and serve warm, optionally with ice cream or whipped cream.
