  • 3 cups Rotisserie Chicken Shredded
  • 8 ounces Button Mushrooms Thickly sliced
  • 1 medium Onion Diced
  • 3 cloves Garlic Minced
For the Sauce
  • 4 tablespoons Unsalted Butter
  • 4 tablespoons All-Purpose Flour
  • 2 cups Low-Sodium Chicken Broth
  • 1 tablespoon Lemon Juice
  • 1 cup Half & Half Can substitute with equal parts milk and heavy cream
  • to taste Sea Salt
  • to taste Black Pepper Freshly ground
For the Topping
  • 2 cups Shredded Mozzarella Cheese
  • 2 tablespoons Parsley Freshly chopped

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C). Butter a 9x13 casserole dish.
  2. In a large pot, boil well-salted water and cook the linguine or spaghetti until barely al dente.
  3. In a large skillet, heat olive oil, sauté mushrooms until softened, add onions until translucent, then garlic.
  4. In the same skillet, melt butter and whisk in flour, then add broth and lemon juice, letting it simmer.
  5. Combine pasta, chicken mixture, and parsley, then stir in the sauce and spread into the casserole dish.
  6. Cover with foil, bake for 20 minutes, then uncover and add mozzarella, baking for another 15 minutes until golden.
