Preparation
- Preheat your oven to 350°F (175°C). Butter a 9x13 casserole dish.
- In a large pot, boil well-salted water and cook the linguine or spaghetti until barely al dente.
- In a large skillet, heat olive oil, sauté mushrooms until softened, add onions until translucent, then garlic.
- In the same skillet, melt butter and whisk in flour, then add broth and lemon juice, letting it simmer.
- Combine pasta, chicken mixture, and parsley, then stir in the sauce and spread into the casserole dish.
- Cover with foil, bake for 20 minutes, then uncover and add mozzarella, baking for another 15 minutes until golden.
