- Begin by preheating your oven to 375°F (190°C). Prepare a baking sheet lined with parchment paper.
- In a mixing bowl, combine olive oil, garlic powder, cumin, salt, and pepper. Marinate the chicken for 5 minutes.
- Heat a skillet over medium heat, add chicken and sear for 6-7 minutes on each side until fully cooked.
- Toast the bolillo rolls in the prepared oven for 5-7 minutes.
- Mix mayonnaise, hot sauce, and lime juice in a small bowl to create the sauce.
- Spread the zesty sauce on the bottom half of each bolillo roll and layer with chicken, veggies.
- Top with the other half of the roll, slice if desired, and serve immediately.
