Preparation Steps
- Grease a 9x13 inch casserole dish with butter or cooking spray.
- Chop the Canadian bacon and layer half of it across the bottom.
- Split the English muffins, toast until golden brown, and chop into pieces.
- Layer half of the toasted muffins over the bacon.
- Repeat layering with remaining Canadian bacon and English muffins.
- In a large bowl, whisk together eggs, cream, whole milk, salts, pepper, onion powder, paprika, and mustard powder.
- Pour the egg mixture over the layered ingredients, pressing down gently.
- Cover with foil and refrigerate overnight or for at least 4 hours.
- Preheat oven to 375°F (190°C). Remove casserole from fridge.
- Bake covered casserole for 35 minutes, then uncover and bake for an additional 10–15 minutes.
- For hollandaise, blend egg yolks, cream, lemon juice, mustard, cayenne, and salt.
- Slowly drizzle in melted butter while blending until emulsified.
- Serve warm with hollandaise drizzled over individual portions.
