Ingredients
  

For the Casserole
  • 4 whole English Muffins or substitute with sourdough or your favorite bread
  • 8 oz Canadian Bacon or regular ham
  • 8 large Large Eggs
  • 2 cups Cream heavy or whipping cream
  • 2 cups Whole Milk or almond/oat milk for dairy-free option
  • 1 tsp Kosher Salt or regular salt
  • 1 tsp Seasoned Salt optional
  • 1 tsp Black Pepper freshly cracked
  • 1 tsp Onion Powder or fresh onions
  • 1 tsp Paprika smoked paprika for more intensity
  • 1 tbsp Dried Mustard Powder or prepared mustard
  • 1 cup Monterey Jack Cheese optional
For the Hollandaise
  • 4 large Egg Yolks
  • 1 tbsp Lemon Juice fresh preferred
  • 1 tsp Mustard any variety
  • 1/4 tsp Cayenne Pepper to taste
  • 1/2 tsp Salt to taste
  • 1/2 cup Butter melted

Method
 

Preparation Steps
  1. Grease a 9x13 inch casserole dish with butter or cooking spray.
  2. Chop the Canadian bacon and layer half of it across the bottom.
  3. Split the English muffins, toast until golden brown, and chop into pieces.
  4. Layer half of the toasted muffins over the bacon.
  5. Repeat layering with remaining Canadian bacon and English muffins.
  6. In a large bowl, whisk together eggs, cream, whole milk, salts, pepper, onion powder, paprika, and mustard powder.
  7. Pour the egg mixture over the layered ingredients, pressing down gently.
  8. Cover with foil and refrigerate overnight or for at least 4 hours.
  9. Preheat oven to 375°F (190°C). Remove casserole from fridge.
  10. Bake covered casserole for 35 minutes, then uncover and bake for an additional 10–15 minutes.
  11. For hollandaise, blend egg yolks, cream, lemon juice, mustard, cayenne, and salt.
  12. Slowly drizzle in melted butter while blending until emulsified.
  13. Serve warm with hollandaise drizzled over individual portions.
