Ingredients
  

For the Meat Sauce
  • 1 lb Ground Beef opt for lean ground beef
  • 0.5 lb Hot Breakfast Sausage substitute with a milder sausage or ground turkey
  • 2 cloves Garlic, minced fresh garlic is ideal but powdered can work too
  • 2 14.5-oz cans Canned Whole Tomatoes crushed or diced tomatoes are great alternatives
  • 2 6-oz cans Tomato Paste using extra fresh tomatoes is also an option
  • 4 tablespoons Dried Parsley, divided can switch to fresh parsley
  • 2 tablespoons Dried Basil Italian seasoning can be a substitute
  • 2.5 teaspoons Salt adjust according to your taste
For the Cheese Layer
  • 3 cups Low-fat Cottage Cheese ricotta is a replacement for a richer flavor
  • 2 beaten Eggs omit for a dairy-free lasagna
  • 0.5 cup Grated Parmesan Cheese freshly grated enhances the taste
For Assembling
  • 1 tablespoon Olive Oil helps prevent noodles from sticking
  • 1 10-oz package Lasagna Noodles use whole wheat or gluten-free noodles if needed
  • 1 lb Sliced Mozzarella Cheese shredded mozzarella can work too

Method
 

Cooking Instructions
  1. In a large skillet over medium heat, brown the ground beef and hot breakfast sausage along with minced garlic until no longer pink, about 8-10 minutes.
  2. Stir in tomatoes, tomato paste, parsley, basil, and salt; let sauce simmer uncovered for about 45 minutes.
  3. While the sauce simmers, bring salted water to a boil and cook lasagna noodles until al dente, about 8-10 minutes. Drain and rinse with cold water.
  4. In a mixing bowl, combine cottage cheese with beaten eggs, remaining parsley, and grated Parmesan cheese; mix until blended.
  5. Preheat oven to 350°F. In a deep baking dish, layer meat sauce, noodles, cheese mixture, and mozzarella; repeat layers finishing with meat sauce and Parmesan.
  6. Cover with foil and bake for 20-30 minutes. Remove foil and bake for an additional 10 minutes until the top is golden and bubbly.
