- In a medium bowl, combine softened cream cheese and goat cheese, mixing with a hand mixer until creamy, about 2 minutes. Add honey, cayenne pepper, and salt, continuing to beat until completely smooth.
- Gently fold in the freshly chopped rosemary using a spatula until just combined. Cover the bowl with plastic wrap and chill the mixture in the refrigerator for about 15 minutes.
- While the cheese mixture chills, line a baking sheet with wax paper. In a separate bowl, combine the chopped cranberries and pistachios.
- Using a cookie scoop, scoop out the chilled cheese mixture and roll it into bite-sized balls, placing each ball on the prepared baking sheet.
- Carefully roll each cheese ball in the cranberry-pistachio mixture, pressing gently for an even coating, and arrange them back on the baking sheet.
- Cover the baking sheet with plastic wrap and chill in the refrigerator for at least 30 minutes.
