Method
 

Steps
  1. In a medium bowl, combine softened cream cheese and goat cheese, mixing with a hand mixer until creamy, about 2 minutes. Add honey, cayenne pepper, and salt, continuing to beat until completely smooth.
  2. Gently fold in the freshly chopped rosemary using a spatula until just combined. Cover the bowl with plastic wrap and chill the mixture in the refrigerator for about 15 minutes.
  3. While the cheese mixture chills, line a baking sheet with wax paper. In a separate bowl, combine the chopped cranberries and pistachios.
  4. Using a cookie scoop, scoop out the chilled cheese mixture and roll it into bite-sized balls, placing each ball on the prepared baking sheet.
  5. Carefully roll each cheese ball in the cranberry-pistachio mixture, pressing gently for an even coating, and arrange them back on the baking sheet.
  6. Cover the baking sheet with plastic wrap and chill in the refrigerator for at least 30 minutes.
