  • 0.75 cups dark brown sugar light brown sugar can be used
  • 0.5 cups sugar to taste
For the Streusel Topping
  • 0.5 cups unsalted butter or vegan butter
  • 0.5 cups sugar
  • 1 tablespoon cinnamon
  • 0.5 cups all-purpose flour

Method
 

Baking Instructions
  1. Preheat your oven to 350°F (175°C) and prepare a 9x5-inch bread pan with nonstick cooking spray.
  2. In a medium bowl, mix together the dry ingredients: flour, baking soda, baking powder, cinnamon, pumpkin pie spice, and salt.
  3. In a large bowl, combine the wet ingredients: canola oil, eggs, pumpkin puree, and vanilla extract.
  4. Gradually add the sugars to the wet mixture, stirring until smooth and creamy.
  5. Fold the dry ingredients into the wet ingredients until just combined.
  6. Pour the batter into the prepared pan and add streusel topping if desired.
  7. Bake for 50-60 minutes, checking for doneness with a toothpick.
