  • 1 bell pepper red or yellow, diced
  • 1/2 red onion finely chopped
  • 1 cup chickpeas drained and rinsed
  • 1/2 cup black olives sliced
  • 1/2 cup mozzarella balls halved
  • 1/4 cup fresh parsley chopped
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup olive oil for dressing
  • 2 tablespoons red wine vinegar for dressing
  • 1 teaspoon dried oregano for dressing
  • 1 teaspoon garlic powder for dressing
  • Salt and pepper to taste for dressing

Method
 

  1. In a large bowl, combine the chopped romaine, cherry tomatoes, cucumber, bell pepper, red onion, chickpeas, black olives, mozzarella balls, parsley, and Parmesan cheese.
  2. In a separate small bowl, whisk together the olive oil, red wine vinegar, oregano, garlic powder, salt, and pepper until well combined.
  3. Pour the dressing over the salad and toss gently to combine. Adjust seasoning if necessary.
  4. Serve immediately or refrigerate for 30 minutes to allow the flavors to meld.
