Egg Filling
  • 6 large Eggs Use room temperature for even cooking.
  • 1 large Egg Medium-boiled, optional.
  • 2 teaspoons Whole milk Can be substituted or omitted for dairy-free.
  • 4 tablespoons Kewpie Japanese Mayonnaise Essential for authentic taste.
  • ½ teaspoon White granulated sugar Balances flavors.
  • ¾ teaspoon Salt Preferably Diamond Crystal.
  • ¼ teaspoon Black pepper Adjust to taste.
Sandwich Assembly
  • 4 slices Shokupan Crusts removed; substitute with fresh white bread if needed.
  • 1 tablespoon Unsalted butter For spreading on bread.
  • 1 tablespoon Chives Finely chopped, optional.
Cooking
  • 1 pot Water Enough to cover eggs for boiling.
  • 1 bowl Ice For ice bath to stop cooking.

Method
 

Preparation
  1. Bring a pot of water to a boil over medium heat. Add six large eggs and boil for 9 minutes. Transfer to an ice bath for 5 minutes to stop cooking.
  2. If using a medium-boiled egg, boil it for 7 minutes and 30 seconds.
Filling
  1. Peel the cooled hard-boiled eggs and slice in half. Mash yolks and whites in a bowl until creamy.
  2. Stir in milk, Kewpie mayonnaise, sugar, salt, and pepper. Mix until combined and refrigerate for 10 minutes.
Assembly
  1. Cut the crusts off the shokupan. Butter one side of each slice. On two slices, place the medium-boiled egg.
  2. Spread the chilled egg filling over the eggs. Top with remaining buttered slices, buttered side down, and press gently.
  3. Slice sandwiches in half diagonally for presentation and serve immediately.
