Method
 

Step-by-Step Instructions
  1. Preheat your oven to 400°F (200°C). Prepare your baking dish with olive oil or non-stick spray.
  2. In a mixing bowl, combine crumbled feta cheese, chopped sun-dried tomatoes, sliced olives, olive oil, minced garlic, dried oregano, salt, and pepper.
  3. Place salmon fillets skin-side down in the baking dish. Season generously with salt and pepper.
  4. Spoon the feta mixture evenly over each salmon fillet.
  5. Cover the baking dish with aluminum foil and bake for 15 minutes.
  6. Remove foil and continue baking for an additional 10 minutes, or until salmon flakes easily.
  7. Garnish with freshly chopped parsley and serve warm.
