Ingredients
  

  • 2 large zucchinis sliced into half-moons
  • 1 pound boneless skinless chicken breasts, cut into bite-sized pieces
  • 1 cup cherry tomatoes halved
  • 1/2 cup red onion thinly sliced
  • 1/4 cup Kalamata olives pitted and halved
  • 3 cloves garlic minced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 cup olive oil
  • 1/2 cup feta cheese crumbled
  • Fresh parsley chopped (for garnish)

Method
 

  1. Preheat your oven to 400°F (200°C). Grease a 9x13-inch baking dish with cooking spray or a little olive oil.
  2. In a large bowl, combine the sliced zucchinis, chicken pieces, cherry tomatoes, red onion, olives, and minced garlic.
  3. Drizzle the olive oil over the mixture, then sprinkle in the oregano, basil, salt, and pepper. Toss everything together until well coated.
  4. Transfer the mixture into the prepared baking dish, spreading it out evenly.
  5. Bake in the preheated oven for 25-30 minutes, or until the chicken is cooked through and the vegetables are tender.
  6. Remove the dish from the oven and sprinkle the crumbled feta cheese on top. Return to the oven for an additional 5 minutes to allow the cheese to soften.
  7. Once done, let it cool for a few minutes, then garnish with fresh parsley before serving.
