- Wash and dice your cucumber and red bell pepper into bite-sized pieces. Halve the cherry tomatoes and finely chop the red onion.
- In a large mixing bowl, add the drained and rinsed chickpeas, diced cucumber, red bell pepper, halved cherry tomatoes, and red onion. Crumble the feta cheese over the top and add the chopped parsley. Gently fold the ingredients together with a spatula.
- In a small bowl, whisk together the lemon vinaigrette ingredients until well combined. Taste and adjust the seasoning if needed.
- Drizzle the prepared lemon vinaigrette over the salad mixture in your large bowl. Gently toss all the ingredients together.
- Taste your Mediterranean Chickpea Salad and adjust the dressing if necessary.
