Ingredients
  

Spice Rub

  • 1 teaspoon Cayenne Pepper omitting will reduce spice; consider adding black pepper as a substitute
For the Ribs
  • 2 racks Baby Back Ribs St. Louis ribs can be used, but cooking times will vary (additional 30-60 minutes)
For the BBQ Sauce
  • 6 tablespoons BBQ Sauce ensure it complements the spice rub for ultimate baby back ribs goodness

Method
 

Preparation
  1. Combine the sugar, salt, smoked paprika, garlic powder, onion powder, ground cumin, dried oregano, ground mustard, and cayenne pepper in a mixing bowl. Stir the ingredients together until they are well blended, creating a vibrant spice rub.
  2. Remove the silver membrane from the back of the baby back ribs for better flavor absorption. Generously coat the ribs with half of the spice rub, covering all surfaces evenly. Let the ribs sit for 15 minutes to absorb the flavors.
  3. Preheat your smoker to a steady 225°F. Place the seasoned ribs in the smoker, bone-side down. Smoke the ribs for 2 hours.
  4. After two hours, wrap the ribs in foil and return them to the smoker for an additional 1.5 hours.
  5. Unwrap the ribs and brush them generously with BBQ sauce. Return them to the smoker for another hour at 225°F.
  6. If using an oven, preheat it to 300°F. Place the ribs on a baking sheet covered with foil. Bake for 2 hours until fork-tender, then remove foil, brush with BBQ sauce, and broil for 2-4 minutes.
  7. Let the ribs rest for about 10 minutes before slicing between the bones and serving hot.
