- In a large skillet over medium heat, add a drizzle of oil and heat until shimmering. Place the chicken in the pan, cooking for about 6–7 minutes on each side until it reaches 165°F and is golden brown. Remove and let rest.
- In the same skillet, reduce heat to medium-low and add melting cheese, paprika, garlic powder, onion powder, cayenne pepper, salt, and black pepper. Whisk for about 4–5 minutes until smooth and creamy.
- Return the cooked chicken to the skillet and pour the creamy sauce over it. Flip the chicken to coat, and heat for an additional 2–3 minutes.
- Transfer the Mexican Chicken with Cheese to a serving platter and garnish with fresh herbs or additional cheese if desired.
