Cooking Directions
  1. In a large skillet over medium heat, add a drizzle of oil and heat until shimmering. Place the chicken in the pan, cooking for about 6–7 minutes on each side until it reaches 165°F and is golden brown. Remove and let rest.
  2. In the same skillet, reduce heat to medium-low and add melting cheese, paprika, garlic powder, onion powder, cayenne pepper, salt, and black pepper. Whisk for about 4–5 minutes until smooth and creamy.
  3. Return the cooked chicken to the skillet and pour the creamy sauce over it. Flip the chicken to coat, and heat for an additional 2–3 minutes.
  4. Transfer the Mexican Chicken with Cheese to a serving platter and garnish with fresh herbs or additional cheese if desired.
