  • 1 cup Mochiko Flour sweet rice flour
  • 1/2 cup Cocoa Powder or dark cocoa
  • 1 tsp Baking Soda fresh for best results
  • 1/4 tsp Salt just a pinch
  • 1 cup Milk or almond/coconut milk
  • 1/2 cup Unsalted Butter melted or coconut oil
  • 2 large Eggs whisk until frothy
  • 1 tsp Vanilla Extract or almond extract
  • 1 cup Chocolate Chips optional, dust with flour

Method
 

Baking Instructions
  1. Preheat your oven to 350°F (175°C). Gather all ingredients.
  2. In a large bowl, combine sugar, mochiko flour, cocoa powder, baking soda, and salt. Whisk thoroughly.
  3. In another bowl, mix milk, melted butter, eggs, and vanilla. Whisk until blended and frothy.
  4. Pour the wet mixture into the dry ingredients and stir gently until just combined.
  5. Grease an 8x8 inch baking pan and pour in the batter. Optionally sprinkle chocolate chips on top.
  6. Bake for 60 minutes. Check doneness with a toothpick.
  7. Let cool completely in the pan before cutting into squares and serving.
