For the Bread
  • 2 cups all-purpose flour Can substitute with gluten-free blend

Method
 

Instructions
  1. Preheat your oven to 350°F (175°C) and grease and flour an 8.5 x 4.5 inch loaf pan.
  2. In a medium bowl, mix 2 cups of all-purpose flour, 2 teaspoons of baking powder, and ½ teaspoon of salt.
  3. In a large bowl, cream together ½ cup of unsalted butter and 1 cup of granulated sugar for 3-4 minutes until pale and creamy.
  4. Add 2 large eggs one at a time, mixing well after each addition.
  5. Gradually mix in half of the flour mixture and then ½ cup of milk, followed by the rest of the flour and milk, being careful not to overmix.
  6. In a separate bowl, mix 1 cup of chopped apple with ½ cup of light brown sugar and 2 teaspoons of ground cinnamon.
  7. Pour half of the batter into the prepared pan, then layer half of the apple mixture, swirling gently.
  8. Pour the remaining batter over the apple layer, top with the remaining apple mixture, and swirl again.
  9. Mix 2 tablespoons of brown sugar with 1 teaspoon of cinnamon and sprinkle on top.
  10. Bake for 45-55 minutes, checking doneness with a toothpick.
  11. Cool in the pan for 15-20 minutes, then transfer to a wire rack.
  12. For the glaze, mix 1 cup of confectioners’ sugar, 1 teaspoon of ground cinnamon, and enough water for smooth consistency, then drizzle over the cooled bread.
