Instructions
- Preheat your oven to 350°F (175°C) and grease and flour an 8.5 x 4.5 inch loaf pan.
- In a medium bowl, mix 2 cups of all-purpose flour, 2 teaspoons of baking powder, and ½ teaspoon of salt.
- In a large bowl, cream together ½ cup of unsalted butter and 1 cup of granulated sugar for 3-4 minutes until pale and creamy.
- Add 2 large eggs one at a time, mixing well after each addition.
- Gradually mix in half of the flour mixture and then ½ cup of milk, followed by the rest of the flour and milk, being careful not to overmix.
- In a separate bowl, mix 1 cup of chopped apple with ½ cup of light brown sugar and 2 teaspoons of ground cinnamon.
- Pour half of the batter into the prepared pan, then layer half of the apple mixture, swirling gently.
- Pour the remaining batter over the apple layer, top with the remaining apple mixture, and swirl again.
- Mix 2 tablespoons of brown sugar with 1 teaspoon of cinnamon and sprinkle on top.
- Bake for 45-55 minutes, checking doneness with a toothpick.
- Cool in the pan for 15-20 minutes, then transfer to a wire rack.
- For the glaze, mix 1 cup of confectioners’ sugar, 1 teaspoon of ground cinnamon, and enough water for smooth consistency, then drizzle over the cooled bread.
