Step-by-Step Instructions
- Preheat your oven to 400°F (200°C). Prepare muffin tin with liners or grease with oil.
- Combine 2 cups of old-fashioned rolled oats with 1 cup of milk. Let sit for 5-10 minutes.
- Add 1/2 cup pure maple syrup, 1/3 cup oil, 2/3 cup brown sugar, and 2 beaten eggs to soaked oats. Stir gently.
- In another bowl, whisk together 1 ½ cups flour, 1 tsp baking powder, 1/2 tsp cinnamon, 1/2 tsp baking soda, and 1/2 tsp salt.
- Gradually add dry mixture to wet oat mixture, stirring gently until just combined.
- Fill each muffin cup 3/4 full with batter and optionally sprinkle extra sugar on top.
- Bake in preheated oven for 18-25 minutes or until golden and a toothpick comes out clean.
- Let muffins cool in tin for 5 minutes, then transfer to a wire rack.
