- Prepare the Chicken: Trim excess fat and wash the chicken. Chop into smaller pieces and pat dry.
- Marinate the Chicken: Combine chicken with onion, garlic, green onion, thyme, bay leaves, browning sauce, dark brown sugar, pimento seeds, paprika, salt, pepper, and Scotch Bonnet. Let it marinate for at least an hour, preferably overnight.
