  • 1 Scotch Bonnet Pepper Finely chopped, adjust for spice
For the Marinade
  • 1 large Onion Sweet or yellow onion preferred
  • 4 cloves Garlic Minced or grated
  • 3 stalks Escallion (Green Onion) Finely chopped
  • 2 sprigs Fresh Thyme Always opt for fresh
  • 2 Bay Leaves Optional
  • 2 tablespoons Browning Sauce Adds color and depth
  • 2 tablespoons Dark Brown Sugar Balances flavors
  • 2 tablespoons Homemade Seasoning Salt/All-Purpose Seasoning
  • 1 teaspoon Paprika
  • 1 teaspoon Pimento Seeds Allspice berries
For Cooking and Flavor Enhancements
  • 1 teaspoon Salt Adjust to taste
  • 1 teaspoon Black Pepper Adjust to taste
  • 2 cups Low Sodium Chicken Stock
  • 1 each Red and Green Bell Pepper Sliced or julienned
  • 1/4 cup Ketchup Adjust as needed
  • 1 tablespoon Soy Sauce Optional

Step‑by‑Step Instructions
  1. Prepare the Chicken: Trim excess fat and wash the chicken. Chop into smaller pieces and pat dry.
  2. Marinate the Chicken: Combine chicken with onion, garlic, green onion, thyme, bay leaves, browning sauce, dark brown sugar, pimento seeds, paprika, salt, pepper, and Scotch Bonnet. Let it marinate for at least an hour, preferably overnight.
  3. Brown the Chicken: Heat oil in a Dutch oven. Sear marinated chicken until golden brown on all sides, about 5 to 10 minutes.
  4. Simmer the Chicken: Stir in the marinade and enough chicken stock to cover halfway. Bring to a boil, then reduce heat to simmer for 20 minutes.
  5. Add Ketchup & Reduce: Stir in ketchup after 20 minutes. Simmer for another 10 minutes until sauce thickens.
  6. Serve the Dish: Remove bay leaves and serve hot with sides like rice and peas or steamed vegetables.
