Cooking Instructions
  1. Preheat your oven to 400°F (200°C) and coat a baking dish with nonstick spray.
  2. Pat pork tenderloin dry and rub with salt, pepper, and Dijon mustard.
  3. Heat olive oil in a skillet over medium-high heat and sear each side of the pork for 3-4 minutes.
  4. Transfer the pork to the prepared baking dish and roast for 15-20 minutes until it reaches 145°F (63°C).
  5. In the same skillet, sauté minced garlic, then add chicken broth, scraping browned bits, followed by heavy cream and additional mustard.
  6. Let the pork rest for at least 10 minutes before slicing and serve with the creamy Dijon sauce.
