Preparation Steps
- In a mixing bowl, combine 1 cup of crushed vanilla wafers with 4 tablespoons of melted butter until resembling wet sand. Press into muffin cups and refrigerate for 10 minutes.
- Beat 8 ounces of softened cream cheese in a large bowl for 2-3 minutes until smooth. Gradually add 1/2 cup sweetened condensed milk, 1/2 cup mashed ripe banana, and 1 teaspoon of vanilla extract, mixing until blended. Fold in 1 cup whipped topping.
- Place a thin slice of banana on each crust. Spoon or pipe the cheesecake filling on top.
- Cover with plastic wrap and refrigerate for at least 1-2 hours, or freeze for 30 minutes to allow the filling to set.
- Before serving, top each cheesecake with extra whipped topping, mini vanilla wafers, and banana slices.
