Step-by-Step Instructions
  1. Preheat your oven to 325°F (163°C) and line a baking sheet with parchment paper.
  2. Sift together 2 cups of all-purpose flour, 1 teaspoon of ground cinnamon, 1 teaspoon of ground ginger, 1/4 teaspoon of grated nutmeg, 1/4 teaspoon of ground cloves, and 1/2 teaspoon of salt.
  3. Cream together 1/2 cup of softened butter, 1/2 cup of granulated sugar, 1/2 cup of brown sugar, 1/4 cup of molasses, and 1 tablespoon of fresh grated ginger until fluffy.
  4. Add 1 large egg and 1 teaspoon of vanilla extract to the mixture and beat until fully incorporated.
  5. Gradually add the dry flour mixture to the creamed butter mixture and mix just until combined.
  6. Roll the dough into balls (2-3 tablespoons each) and place them on the baking sheet, flattening slightly.
  7. Press thin slices of Gala apples into the center of each cookie and sprinkle with sugar and cinnamon.
