- Preheat your oven to 325°F (163°C) and line a baking sheet with parchment paper.
- Sift together 2 cups of all-purpose flour, 1 teaspoon of ground cinnamon, 1 teaspoon of ground ginger, 1/4 teaspoon of grated nutmeg, 1/4 teaspoon of ground cloves, and 1/2 teaspoon of salt.
- Cream together 1/2 cup of softened butter, 1/2 cup of granulated sugar, 1/2 cup of brown sugar, 1/4 cup of molasses, and 1 tablespoon of fresh grated ginger until fluffy.
- Add 1 large egg and 1 teaspoon of vanilla extract to the mixture and beat until fully incorporated.
- Gradually add the dry flour mixture to the creamed butter mixture and mix just until combined.
- Roll the dough into balls (2-3 tablespoons each) and place them on the baking sheet, flattening slightly.
- Press thin slices of Gala apples into the center of each cookie and sprinkle with sugar and cinnamon.
- Bake for 20 minutes or until the edges turn golden brown. Allow to cool for 10 minutes on the baking sheet before transferring to a wire rack.
