  • 3 cloves Garlic Fresh, not pre-minced
  • 1 Fresno Pepper Mild heat; can substitute with jalapeño
  • 1 teaspoon Dried Oregano
  • 1/2 cup Extra Virgin Olive Oil High-quality oil
  • 2 tablespoons Red Wine Vinegar Can substitute with lemon juice
  • to taste Salt
  • to taste Pepper Use freshly ground
Shrimp Ingredients
  • 1 pound Jumbo Shrimp Peeled and deveined
  • 1 tablespoon Honey Can substitute with agave syrup
  • 1 teaspoon Smoked Paprika Can replace with regular paprika

Method
 

Chimichurri Sauce Preparation
  1. Finely chop parsley, garlic, and Fresno pepper. In a medium bowl, mix with oregano, salt, and pepper. Add olive oil and vinegar; stir well. Let sit for at least one hour.
Shrimp Marination
  1. In a bowl, add shrimp. Drizzle with olive oil and sprinkle garlic, honey, smoked paprika, salt, and pepper. Toss to coat and marinate in the refrigerator for 20 minutes.
Cooking Shrimp
  1. Heat grill pan over high heat. Arrange marinated shrimp in a single layer. Sear for 2-3 minutes on each side until opaque and slightly charred.
Serving
  1. Transfer shrimp to serving dish. Drizzle with chimichurri sauce and toss gently. Reserve extra sauce for dipping.
