Ingredients
  

  • 2 cups romaine lettuce chopped
  • 1 cup cherry tomatoes halved
  • 1 cup cucumber diced
  • 1/2 cup red onion finely chopped
  • 1/2 cup bell pepper diced (any color)
  • 1/2 cup shredded carrots
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup olives black or green, sliced
  • 1/4 cup fresh parsley chopped
  • 1/4 cup olive oil
  • 2 tablespoons red wine vinegar
  • 1 teaspoon Dijon mustard
  • Salt and pepper to taste

Method
 

  1. In a large bowl, combine the chopped romaine lettuce, cherry tomatoes, cucumber, red onion, bell pepper, shredded carrots, olives, and parsley. Toss gently to mix the vegetables evenly.
  2. In a small bowl, whisk together the olive oil, red wine vinegar, Dijon mustard, salt, and pepper until well combined.
  3. Pour the dressing over the salad and toss to coat all the ingredients evenly.
  4. Sprinkle the grated Parmesan cheese on top and give the salad a final toss.
  5. Serve immediately or chill in the refrigerator for about 15 minutes to allow the flavors to meld before serving.
